Easy Banana Bread

My husband and I always have a ton of bananas on hand for his daily smoothies, but he uses them when they’re still green, so, inevitably, they get too ripe. Luckily, in our house, that means it’s time to make banana bread!

I have this easy recipe that I always use that makes it easy to throw in any added goodies that I have lying around, like dried cranberries, different kinds of nuts or chocolate chips. You can substitute anything that adds a little zing or texture.

This time I used chopped dates, chocolate chips and crushed almonds.

Easy Banana Bread

Ingredients

  • 1 ¾ cup sifted all-purpose flour
  • 2 ¼ tsp double-acting baking powder
  • ½ tsp. salt
  • ⅓ cup shortening
  • ⅔ cup sugar
  • ¾ tsp. grated lemon rind
  • 1 to 2 beaten eggs
  • 1 to 1 ¼ cup ripe banana
  • ½ cup nuts, in pieces
  • ¼ cup dried fruit (cranberries, apricots, dates…anything!)
  • optional: chocolate chips

Directions

  1. Preheat oven to 350 degrees. Grease a 8.5 x 4.5 inch loaf pan.
  2. In one bowl, sift together flour, baking powder and salt.
  3. In another bowl, blend shortening, sugar and grated lemon rind until creamy.
  4. Beat in eggs and banana.
  5. Add the sifted ingredients in about 3 parts to the sugar-egg mixture. Beat the batter after each addition until smooth.
  6. Fold in nuts, dried fruit and optional chocolate chips.
  7. Place the batter in a greased bread pan. Bake the bread about 1 hour or until done.
  8. Cool before slicing.
